Classic Full English Breakfast

This is one of our favourite things to cook on our Tawi stove. Bacon, black pudding and tomatoes cook perfectly on top, while we often cook mushrooms in a saucepan on the front and toast our bread on the grill tray. The shelf can be used to keep food warm, for example the bacon and tomatoes, while we fry our eggs last, or sometimes we use it to cook a warm treat such as cinnamon rolls; as pictured above. From start to finish this usually takes about half an hour and uses about a bundle and a half of twigs.

Mackerel and Basa Fillets with Potatoes and Steamed Vegetables

The Tawi stove is perfect for cooking fish, thanks to the consistent heat and flat cooking surface. We cooked Mackerel and Basa fillets on top of the flu, but you could use most varieties of fish fillet. Heat oil on the skillet first, then arrange previously cooked potatoes and fish on the skillet; cover and cook for about 10-15 minutes. If you prefer not to fry your potatoes, you can boil fresh ones in a pan on the front cooker, underneath the steaming vegetables. We used the back surface to heat some baked beans in their tin, but that surface could be used for your sauce of choice. Be aware that it takes longer to boil the water for the vegetables than to cook the fish! Use the shelf to warm your plates. This meal took about 25-30 mins to cook, using about one bundle of twigs.

Grilled Goat's Cheese and Beetroot on brown bread Toast

Entrees work well on the Tawi stove too! This recipe is very easy; simply spread a chutney of your choice on brown bread, add sliced fresh beetroot and then top with goat's cheese. Place under the grill until the cheese just begins to brown. Remember to rotate the toast during cooking. You can use the other cooking surfaces to prepare your main course. In the picture shown, we cooked rice under steaming parsnips on the boiling plate, fried some leeks with chestnuts and coriander on the main burner to make risotto, while heating balsamic stewed red cabbage & apple on the warmer plate at the rear. Total cooking time was about an hour, & required 3 bundles of sticks - not bad for a delicious two course meal!

Brownies

Baking works well on the Tawi stove in small batches, but keep an eye on it as it will burn very easily! A cast iron pan such as the one shown above is perfect for retaining the heat needed to bake. Once your batter is in the pan, start with it on the front surface to get the batter hot. After about 5 minutes move it to the grill shelf to cook evenly. Be careful to turn the pan around frequently, otherwise the side closest to the fire will cook too fast. Baking times are similar to those recommended by your recipe (usually about 20-30 minutes on the shelf), requiring about two bundles of twigs. ​

Wood-gas Burner

The main cooking surface, perfect for frying, with good heat distribution from the wood-gas flame. Simply place a frying pan or wok on it and go!

Boiling Plate

The hottest surface, reaching temperatures of 400℃. This makes it good for boiling water or cooking food which requires a high heat, such as mushrooms in a sauce. Use a heavy bottomed saucepan on this surface, or use a stove kettle to make tea! 

Warmer Plate

This surface is much cooler than the front plate. Use this area for keeping food warm, lightly frying bread or heating food which needs a lower heat. You can use a baking tray or even some aluminium foil to cook here, but be very careful if using foil – it may be the coolest surface but it is still very hot!

Toasting Grill

The temperature from front to back in the grill changes quite dramatically. The hottest area is just under the flame. The temperature diminishes the further towards the back (away from the flame) you go. When cooking in the grill be sure to keep an eye on your food, moving things around frequently to ensure it cooks evenly.
